The Fourth Bread of Christmas: Pannetone

Hello Friends and Fellow Bakers! Here we are with Pannetone, an Italian Christmas bread that is widely commercially produced. I made the version from the Bread Baker’s Apprentice, which includes cherries, cranberries, almonds, and raisins. Legend has it that a baker named Tony invented this bread to impress the father of the woman he wanted to marry. He threw all of the expensive add ins he could afford, or so the saying goes. Tony impressed the man, who gave his blessing on the wedding and financed Tony to make his Pannetone (the bread of Tony) in his own bakery, or so the story goes.

This Christmas bread is popular all over the world now and can be served in a variety of formats and shapes. Most famously it is baked into a towering cylinder, but I decided to do muffin size to make it easier to hand out to all of my local bread enthusiasts.
